Slightly bitter dark chocolate followed by a sweet light and fluffy mousse texture (like whipped egg whites)
6 Day steep
Increase in strength and sweetness, overall profile remains unchanged.
14 Day steep
The dark chocolate taste has now reduced, this is more like a milk chocolate mousse, however that slightly bitter dark chocolate taste remains in the background although a lot lighter. This has the light fluffy mouthfeel of a mousse but doesn’t have that mousse richness in the taste.
Suggested Usage
I’d use as a main flavour at 3%-5%, A Background at 2%-3% and an accent at 1%-2%. Standalone at 5%-9%
Use with other chocolates to provide a light airy texture. I believe this will also work well with Creams, Light Custards, Light Vanilla, Dairy, Fruits, Cakes, Cereals and some nuts.
VTA Recommend 1%-2% and Standalone 3%-6%
