Boozy note of possibly a brandy or Rum with a faint fruit note but no cake element.

9 Days

This is a definite fruit cake, I'm getting some mixed fruits with possibly some raisins/currants no cherry flavours though that I would use in a fruit cake, and a slight taste of chopped nuts, that booze element is still there I believe this to be a brandy note.

This has become richer and the boozy note has become stronger, this is a definite brandy note, this tastes just like a Home-made fruit cake.

Usage

I'd use this at 2%-3% as an accent flavour, 3%-4% as the primary flavour in a mix and 6%- 10% Stand-alone

This may be useful for recreating a festive pudding type taste, as an accent flavour you'd get primarily that alcohol note with the faint mixed fruit so may be useful to add into some bakeries as an accent, should pair well with creams and custards.

VTA Recommend 1%-5% in a mix and 5%-9% Stand-alone
