Summary
This is a sweet, juicy and syrupy Lemon with a very light tartness at the end. Due to the syrupy mouthfeel this is reminiscent of the syrupy centre in Lemon candies. Due to the mouthfeel this would make an excellent addition to a bakery or a cream mix, mix this with custards to push it towards a lemon curd. This starts of strong but does fade a little over a long steep, so either add towards the end of a long steep mix or with another lemon to keep the fading to a minimum. At 3%-4% this would be perfect for the filling of a lemon candy, use at 2%-3% for a lemonade mix. If using in a short steep recipe, reduce the above suggested percentages to accent 0.5%-1%, Background 1%-2%, Main 2%-3%
