Chefs Flavours description – “The name says it all!”

SnV

Slightly tart and green strawberry with a light creaminess in the background

7 day steep

The strong green note of the strawberry has now faded, the Strawberry now tastes like a ripe strawberry with a slight green note this has a light creaminess to it but isn’t cheesecake like at the moment

14 day steep

No change

21 day steep

No change

28 day steep

The cheesecake like note has come out more but this mainly affects the mouthfeel of this flavour with a thick creaminess, in terms of flavour there is a very slight cheesecake sour to this and no biscuit base. No change to the strawberry flavour

Suggested usage

I’d use as the main flavour 7%-10%, Background 4%-7%, Standalone 10%-15%

I’d use with Biscuit, Ice Cream, Dairy, Fruits, Cheesecakes and yoghurt.

Summary

For me this isn’t quite a cheesecake as it is missing the crumbly biscuit base and a stronger cream cheese sour note. I believe this would make a good addition to a strawberry milkshake or strawberry custard to thicken up the mouthfeel and add a thick creaminess to these.

I believe this would make a decent base to build a strawberry cheesecake off with the addition of a biscuit(s) as well as maybe a yoghurt to add the sour note.
