Manufacturers Description “A classic Canadian dessert. Flapper Pie is a creamy custard filling topped with meringue over a delectable graham crumb crust. Use this flavour on its own or to compliment ice cream, cake, pastry, or even fruit mixes!

SnV

Sweet and buttery with a meringue topping, no crust at the moment

7 Day steep

Increase in taste. A custard like taste is now developing there is also a very light lemon like note in the background. The meringue is now fully developed and is sweet and light with the classic meringue taste. Still no crust

14 Day steep

The lemon note has now gone, the vanilla custard has picked up in taste, although the meringue is still the more dominant taste

21 Day steep

No change

35 Day steep

The meringue is still the dominant flavour and the slight lemon has re-appeared there is a very light lemon custard in the background

Suggested Usage

I’d use this 0.75%-1.5% as an accent, 1.5%-3% as a background flavour, 3%-5% as the main note. If you wanted this as a standalone flavour I’d suggest 4%-6%.

I’d use with Fruit, Creams, Custards, Bakery and vanilla.

Summary

This is very meringue heavy with the usual egg white taste of a classic meringue, in the background is a light lemon custard. This isn’t overly strong so can be taken quite high in a mix to give a full meringue topping, the lemon custard whilst present will get covered in a mix. I would mainly use this to give a meringue topping for bakeries.

WF SUGGESTED DILUTION RATIO: 1%-4%
