There is a very slight sour taste on the cheese base but not as sour as a non-Ny style cheesecake, this is very creamy with a full mouthfeel fitting the profile as NY style cheesecakes are typically made with a heavy cream, instead of Mascarpone cheese giving a creamy and dense taste with very little sourness.
This has a crumbly and buttery biscuit base; this base comes through at the end although is slightly stronger tasting than the cheesecake topping.

Suggested Usage
I’d use as a main 2%-3%, Background 1%-2%, Accent 0.5%-1%. Standalone 0.5%-1%
I’d use with Cheesecakes, Creams, Bakery, Yoghurt, Fruit, Vanilla, Some spices, Custard, Caramel, Butterscotch and Toffee.
This would make a good base for a Cheesecake mix.
