Sweet almond followed by a medium thick cream, the almond is more like an extract than the nut

The mouthfeel has increased, this is now a thick cream verging on a custard no other change

14 Day Steep

The almond has faded slightly and blended in. The cream has now tipped over into a light vanilla custard with very low egg notes, this has a thick mouthfeel

Suggested Usage

I’d use this as an accent 0.5%-1%, Background 1%-2%, Main 2%-3%

If you wanted this stand-alone, I’d suggest 3%-4%

I’d use this with Fruit, Nuts, Creams, Custards, Bakery


After a steep this is a light vanilla custard with some low egg like notes, Almond and bright vanilla accents. The almond, to me, tastes more like an extract than the raw nut. This would work well in bakery mixes as well as with other custards. If you wanted to push this more towards a raw Almond a low % of FA Nut mix should do this. this is more custard than Almond custard and would need another almond added just to boost the almond note slightly to ensure it doesn’t get buried within a mix
