This is a marzipan forward sponge cake with a thick vanilla cream and a very light raspberry jam, this all blends together to give a bakery with a thick mouthfeel as well as being lightly crumbly in texture. I would use this with other bakeries to enhance the sponge part or as a background note in a custard to thicken and add depth
